Zesty limes flavour this deliciously creamy Paleo cheesecake. You don't get a dessert that's much healthier than this one. This dessert came about when I had an abundance of limes on my tree, they were falling everywhere, I didn't want to waste them, so it was time to get creative. I put a photo of my tree on Facebook and you all came up with some wonderful ideas.
I made a Chocolate & Lime Paleo Cheesecake
The most popular idea was a lime pie, so I got to work and created a creamy dairy free pie. I'm calling it a Paleo cheesecake because of the delicious creamy filling. It's filled with heart healthy creamy avocados, macadamia nuts, coconut cream, the whole lime fruit and sweetened with organic maple syrup. The filling is sitting on a chocolaty crust of almonds, dates, coconut and raw cacao powder.
To give a more decadent look to my cheesecake, I topped it with a drizzling of dark chocolate in a crisscross pattern and sprinkled it with chopped pistachios and extra lime zest. It's perfect for a birthday celebration or special occasion.
I still have lots of other lime recipe ideas you have given me to work through, so keep an eye out. In the meantime I'm adding lime juice to most of my meals, I'm even adding a peeled lime each morning to my smoothie. Limes are small green skinned citrus fruit. There are many species of the lime tree, the most popular that is used in recipes is the small key lime. Most varieties are pip free but still check before adding the flesh to the recipe. Limes are an excellent source of vitamin C and calcium, they are perfect for adding a fresh tangy flavour to foods and beverages.
